Lemon pancakes? That sounds delicious but I never heard of lemon pancakes before.

Just add citrus zest to dry ingredients. I use about 1 lemon or 1/2 an orange zest for a small batch of about 6 cakes.You might start with less.
You'll be amazed at the taste.
Once you go citrus, you'll never go back, baby!
