Just put some aluminum foil on the grill and .put your fish on that. It saves a lot of headache and cleaning

Winds - To grill fish, make certain you've pre-heated and cleaned the grill grates well, using water and a grill brush or pad.

Do spray or coat grates with oil. If fish is not marinated first, using some type of oil in the marinade, make sure it is dried and/or rubbed with seasonings.

Fish is a one turn(flip) deal, wait until you can see some of the albumen(white funky stuff) exuding from the middle of the side of your fish, so that you know it is about 1/2 cooked. Then using a spatula about as large as your piece of fish, slide it under very gently and ease the fish on to it's top side. If your pieces of fish are too large for your spatulas, just cut the fish down to size. Enjoy!

Fish, cottage cheese, corn, mustard greens, and bread and butter. Simple, quick and tasty.

Just polished off leftover, eggplant rolatini with baby shrimp, roasted garlic and plum tomatoes in asiago cream sauce over agel hair AND chicken and spinach stuffed shells with diced plum tomatoes in a white wine and roasted garlic sauce. These delicacies were from a real nice little Italian restaurant called SofFrito in Newark, DE.
