Looks good I am coming over.

Not sure about tonight, I worked 14 days in a row so I am beat (we are short people, but it is a temp job) I also have another interview today and tomorrow but I am craving enchilada's so I may make some. I may do it the easy way and not bake them in the oven as well, just make a taco/burrito and heat the sauce on the stove and pour it over it.

I have never heard of that but it sounds good.

Tonight I had two tilapia fillets. Cooked in a cast iron skillet, a dribble of olive oil, a few shakes of Old Bay seasoning and a splash of soy sauce.

Sirloin steak on the grill tonight. Got some Bambi mama in the crock pot for tomorrow night while I watch the Gators play.

Also gonna smash up some redskin 'taters, and some mixed veggies on the side tonight.
