Yeah, for mine, I use hamburger. I have tried other forms of beef a few times, but whiteout the results I wanted. I would consider Buffalo, but it's way too pricey, and probably wouldn't change the rase at all, so why bother?

OK THIS RECIPE HAS BEEN IN THE FAMILY FOREVER.

1 PIECE OF CHUCK ROAST APPROX 3 LBS, (CUBED)
4 MEDIUM ONIONS, CHOPPED
3 RED PEPPERS.3 HOT PEPPERS (JALAPENO)
2 LARGE CANS PEELED TOMATOES (28 OR 32 OZ)
2 CANS TOMATO PASTE
1 CAN TOMATO SAUCE
3-4 CLOVES GARLIC CHOPPED
1/4 CUP CHILI POWDER
2 TABLESPOONS CUMIN
1 TABLESPOON SALT
1 TABLESPOON BLACK PEPPER
1 TABLESPOON CRUSHED RED PEPPER
1 OR 2 CANS RED KIDNEY BEANS

Cut meat into cubes; in the bottom of a pressure cooker put 1/2 cup of vegetable oil and the meat cubes, add chili, cumin,garlic, salt, pepper and crushed pepper;cook apron. 25-30 minutes try to brown meat not burn it.

In a large pot put the remaining ingredients and cook about 1 hr. Watch that the tomato sauce does not burn and stick to the bottom of the pan. When the meat and spices are done cooking remove from pressure cooker and add to pot with the tomato sauce, continue cooking uncovered for about 1/2 hour and add beans half way though.

This is one of the best ever.

Holy Crap! Who are you feeding, an army? LOL, I'd have to cut that in thirds. Mmmm, chuck roast, I bet that's good. But I don't have a pressure cooker, we're not allowed to have those in the Boston area any more.

heck his recipe is quite small by my standards! even my small batches use at least 4-5 lbs. of meat! i have made batches where i cooked for everybody at work where i have use 8-10 lbs. of meat to make the chili.

I have a pressure cooker and I rarely use it. It cooks food faster but I just don't like the texture of the meat and flavour that comes out of the pressure cooker.

Interesting. I don't believe I have even SEEN a PC. Or eaten food from one.
