Camping recipes
 
My wife and i got into camping last summer, bought a used Starcraft popup from a craigslist ad and camped nearly every weekend last summer and plan on doing the same this summer. Any fellow rv'ers or campers like to share some campsite recipes id love to hear some ideas for this year. Breakfast, lunch, dinner, snacks lets hear em.

We like to make what my wife calls "Hobos", im not sure where she got the idea but it is good.

Cutup red potatoes and sausage, combine with baby carrots, some onion, cabbage leaves, season salt and butter. Wrap it in aluminum foil and put it on the grill or over the campfire till the carrots and potatoes are soft. Its really good and easy to make while camping.

When you have enough people,
get a large pot of boiling water,
in a plastic bag, put two eggs (beaten), diced green pepper, diced ham, bacon bits, onion, mushrooms.

Remove as much air as possible, seal it, scribble the name of the person on the bag and toss it in the water.
let it cook until the eggs are done.

Then put the mixture on buttered toast (use real butter). Throw the bag away.

Heck, I make homemade buttermilk biscuits, fried eggs, and bacon for our breakfast when we are camping! Grilled steak and baked taters (done in the hot coals) for supper. We are going in couple of weeks but I am gonna cheat this time and take the crockpot since we are hitting a little campground that actually has electricity (even if it is in the boonies!) and thaw some homemade beef stew in it that I froze last time we had some at home. Will make homemade cornbread to go with it!

For those of us old enough to partake of "legal" beverages, when we were in our twenties, we'd hike the Appalachian trail in Winter. This made for an enjoyable campout because if there is snow, there is no need to camp near waterways. You can camp anywhere!

For the sake of weight, for beverages, we'd only pack 100 proof vodka and packs of Tang or Koolaid, we'd have Sno-cones around the campfire. It made for some pretty good sleepin' in the wilds!

Get some graham crackers, marshmallows and some chocolate bars. Break the graham crackers into squares. Toast a marshmallow and put it on one of the graham cracker squares. Added a couple squares of chocolate and put a second graham cracker square on top of it all. :D

Snag a copy of Trail Cooking by John Weiss- there are a few used copies over on Amazon for a buck or less. Good intro to Dutch Oven cooking and baking.

Our kids loved hot cornbread with dinner, and blueberry muffins at breakfast. If you do not have a real dutch oven (and they ARE heavy) you can make a lightweight camp oven.

You need a #10 can, both ends cut out- and three can lids, 9ea 1 inch stove bolts & nuts and a wooden drawer knob & screw.

Drill 3 equally spaced holes 2 inches from the bottom edge, insert bolt from outside in, tighten nuts, place lid inside resting on bolts. Do same thing 3/4 of an inch higher, offsetting bolts, drop second lid inside, resting on those bolts. drill one last set of the holes 1/4 inch from the top, insert bolts/nuts. Take last lid, attach drawer knob in center. That is the door to your oven.

You should now have a double bottom (prevents burning) and a top. You can use a couple of charcoal briquets for heat (set oven over the burning charcoal) or use it on a camp stove. Empty beef stew can makes great baking tin.

I used to microwave scrambled eggs when the kids were little and I was too pressed for time to actually scramble the eggs on the stove top.

I like to clean a fresh caught trout. Put it on a sheet of aluminumn foil. Add a little garlic salt, fresh ground pepper, a couple cubes of real butter and whatever other seasonings you like. Wrap it all up in the foil. After the fire goes out and the coals are still hot put the wraped up trout in the coals and bury it in them for like 20-30 minutes. Delicious!
