There were some great ones in Equilibrium; my favorite is very near the end. The whole "gun kata" thing was ninjarific!

Heat, The Professional, and Ronin all have some great scenes

I know I'm going in a different direction here, but I loved seeing Kate Beckinsale shoot up some werewolf's while wearing that corset and latex outfit

Open Range (a newer western), near the end of the movie. The double barrel shotgun blast though a wall that slams the guy against the next building. While not an honest expectation it's sweet to watch.
